Ingredients:

  • 70g / ½ cup all purpose flour
  • 2 tbsp sugar
  • ¼ tsp baking powder
  • 80ml / 1/3 cup Mighty m.lk
  • 1½ tbsp vegan butter, melted
  • 1 tsp grated lemon zest
  • Handful of blueberries – frozen or fresh!

Recipe:

  1. In a small mug, whisk together flour, sugar, baking powder and salt (optional)
  2. Stir in your m.lk, butter and lemon zest. Fold in your blueberries and microwave on high until it’s completely cooked through – about 90 secs – 2 mins
  3. Dig in!
