For the creamy sauce  
  • 50g vegan spread
  • 50g plain flour
  • 100g vegan cream cheese
  • 4 tbsp nutritional yeast flakes
  • 1 tbsp balsamic vinegar
  • Salt & pepper
  • Pea shoots
For the baconless tofu; 
  • 250g pressed tofu cut into 15mm battens
  • 200ml soy sauce
  • 1 tbsp tomato purée
  • 2 tbsp maple syrup
  • 1 tbsp white miso
  • 1 tbsp rice wine vinegar
  • 1 tsp caster sugar


  1. Method preheat the grill to 200 degrees
  2. Firstly in a small saucepan add all of the baconless tofu ingredients apart from the tofu itself. Heat and whisk until the sugar has dissolved, cool and add the tofu battens to it covering the tofu, line a baking tray with foil and lay out the tofu, put to one side until the grilling stage.
  3. In a heavy bottomed saucepan melt the vegan spread and whisk in the flour until combined, now slowly pour in your MIGHTYLKOLOGY whisking constantly, turn up the heat a little and stir in the vegan cream cheese, nutritional yeast and balsamic vinegar and season well.
  4. In a saucepan of salted boiling water add the vegan penne pasta stir and simmer for 15mins or to the packet instructions as you add the pasta to the water put the baconless tofu under the hot grill turning once and basting the tofu with the remaining marinade four times, twice on each side, you want it to be crispy but not black.
  5. Now remove the tofu from under the grill and drain the penne pasta reserve X3 tbsp of the cooking water and stir that and the pasta into the MIGHTY creamy sauce and divide into two bowls, top with the baconless tofu and sprinkle with the pea shoots. MIGHTY meatless with the full flavour.
