A delicious vegan mac and cheese made using our versatile MIGHTY M.lkology and Weetabix’s iconic biscuits.
- 1 medium carrot
- 150g vegan cheese
- 125 ml M.LKOLOGY Whole
- Seasonings: paprika, garlic, nutritional yeast, salt and pepper
- 450g macaroni
- Olive oil
- 150g spinach or any greens you choose
- 40g lightly crushed Weetabix
- Chop carrots and cook for 15 minutes until soft.
- Add carrots, vegan cheese, olive oil and M.lkology Whole into blender and blend until a smooth consistency is reached.
- Add seasoning to mixture. We went for nutritional yeast, chilli, paprika and garlic.
- Cook macaroni according to instructions on pack.
- Combine the drained macaroni with the spinach and sauce, then mix together.
- Top with the Weetabix biscuit crumb, and add more cheese as desired.
