MIGHTY SCONES RECIPE
SCONES INGREDIENTS:
- 450g self raising flour
- 90g caster sugar
- 110g vegan butter
- 60g sultanas (or dried fruit of your choice)
- 1tsp vanilla bean paste
- 200ml Mighty Oat Milk*
- 40g icing sugar
- 10ml boiled cooled water
HOW TO MAKE SCONES:
1. Pre-heat the oven to 200C fan.
2. In a large mixing bowl, sift the sugar and flour together, then rub in the butter until you have a breadcrumb consistency.
3. Stir in the dried fruit.
4. Make a well in the centre and pour in the milk and vanilla.
5. Fold together as briefly as possible, until you have a uniform texture.
6. Turn out onto a lightly floured surface.
7. Using a rolling pin if necessary, or just your hands, shape the dough into a thick disc.
8. Slice into 8 even wedges.
9. Bake for 15mins.
10. Allow to cool.
11. Mix the icing sugar and water to make a glaze.
12. Brush over the cooled scones.
*The recipe has utilised Mighty Oat Milk Powder, diluted to the manufacturer’s recommendation of 10g powder for every 100ml water.
