VEGAN MAC 'N' CHEESE
1 medium carrot
150g vegan cheese
125 ml M.LKOLOGY Whole
Seasonings: paprika, garlic, nutritional yeast, salt and pepper
150g spinach or any greens you choose
40g lightly crushed Weetabix
1. Chop carrots and cook for 15 minutes until soft.
2. Add carrots, vegan cheese, olive oil and MIGHTY M.LKOLOGY into blender and blend until a smooth consistency is reached.
3. Add seasoning to mixture. We went for nutritional yeast, chilli, paprika and garlic.
4. Cook macaroni according to instructions on pack.
5. Combine the drained macaroni with the spinach and sauce, then mix together.
6. Top with the Weetabix biscuit crumb, and add more cheese as desired.
